Jersey tomato

The state's signature summer crop and a standard judged class in fair produce competitions.

The Jersey tomato is New Jersey's best known agricultural product, tied to the state's sandy soil and a short mid to late summer window. At county fairs it shows up twice: as a judged produce class in the exhibition hall, and on the plate at food stands. Because the crop peaks in late July and August, the fairs that overlap that window are the ones where the tomato displays are worth a detour.

Also known as: Jersey beefsteak.
