The premium book is the document a fair publishes before the gates open. It lists each competitive class, the entry rules and deadlines, and the premium, the cash award paid to placing exhibitors. Anyone entering a pie, a quilt, a heifer or a tomato should read it first, because entry deadlines come before the fair opens. It also shows what will be judged and displayed in the exhibition halls.
